Red Velvet Cake
This deep red velvet cake with its velvety texture and a subtle flavor of cocoa is hidden under a snow white, luscious vanilla-laced cream cheese frosting.
Recipe
Cake Batter:
4 oz of coco powder
2 oz of red food coloring
2 cups of flour
1 tsp of salt
2 tsps of distilled vinegar
2 tsps of baking soda
1 cup of room temperature butter
1 cup of sugar
2 eggs
2 tsps of vanilla extract
1 cup of butter milk

Cake Frosting:
16 oz of room temperature cream cheese
1/2 lb or 2 sticks of room temperature butter
1 lb or 4 cups of powdered sugar, sifted
2 to 3 tsps of vanilla (we used 3)

Cake Instructions:

Preheat oven to 350 degrees F

1 Mix together the coco powder and red food coloring then set aside

Sift together flour and salt

In a separate bowl mix together vinegar and baking soda then set aside

Mix together butter, sugar, and eggs until smooth (2 to 3 minutes)

Mix in red food coloring mixture

Mix in vanilla extract

Start alternating in the flour mixture and butter milk

Next fold in your baking soda/vinegar mixture

Grease and line cake pans with butter and parchment paper

Add half the cake batter into each pan

Bake for 30 minutes or until a tooth pick comes out clean

Frosting Instructions:

Mix together cream cheese and butter until fluffy
-
Add the sugar, 1 cup at a time
-
Mix in the vanilla and beat until very smooth, 3 or more minutes
-
Let stand at room temperature until soft and spreadable before using.
