Banana Nut Bread

Is it a bread or a cake...hard to decide! This mouthwatering banana bread has coconut, chocolate chips and chocolate chunks and pecans! So delicious!

Recipe

3 tablespoons of butter  

1/2 a cup of packed light brown sugar

3 large, ripened mashed bananas

1/4 cup of rum

1/4 cup of cognac...we used brandy

2 cups of flour

1 tsp of salt

1 tsp of baking powder

1/2 tsp of baking soda

one stick (or 8 tbsps) of butter

1 cup of sugar

2 large eggs

1 Tbsp of sour cream

1/4 cup of chocolate chips

1/4 cup of dark chocolate chunks

1/4 cup of pecan pieces

1/4 cup of sweetened coconut.

Instructions:

Preheat oven to 350 degrees

​

In a large skillet over medium heat, melt 3 tablespoons of butter Add 1/2 a cup of packed light brown sugar. Stir often until the sugar melts completely and becomes a smooth syrup...it usually takes about 10 minutes. Next stir in the 3 large, ripened mashed bananas, 1/4 cup of rum, and 1/4 cup of cognac...we used brandy.

 

Cook, stirring often another 10 or so minutes. After, set to the side to cool.

In a separate bowl whisk together 2 cups of flour, 1 tsp of salt, 1 tsp of baking powder, and 1/2 tsp of baking soda. In a large mixing bowl beat on medium high one stick (or 8 tbsps) of butter with 1 cup of sugar for about 3 minutes or until light and fluffy. Next, add 2 large eggs and beat until blended. Okay, its time to add the flour mixture to the bowl and beat just until it is blended. Add the cooled bananas and 1 Tbsp of sour cream and give the mixture another quick blend.

The next 4 ingredients are optional, but trust me, they make this banana bread soooo incredible. So fold in 1/4 cup of chocolate chips and 1/4 cup of dark chocolate chunks, 1/4 cup of pecan pieces, and lastly, 1/4 cup of sweetened coconut.

 

Yes, I do eat the batter...I just can't help it!! :)

 

Okay, we are getting close...butter your bread pan and it doesn't hurt to put in a piece of parchment paper at the bottom. Once you have that done, scoop batter into the pan and bake for 1 hour, 15 minutes, or until a tooth pick comes out clean. I put a piece of aluminum foil on top of mine the last 15 minutes so it didn't over brown on top.

 

I know it is hard to wait for it to cool, but if you can, the bread will cut perfectly when serving. Spread a little butter on top and ENJOY!!
