Vegetarian Lasagna Soup

This delicious lasagna soup is a super way to eat lasagna, but in soup form! So easy, just add everything to one pot and let the magic begin! We add chunks of Parmesan cheese so each bite is a burst of flavor and cheese! Throw your rinds in too!

Recipe

2 to 6 cloves of garlic, diced or chopped 

1 yellow onion, chopped

1 red bell pepper, chopped 

1 green bell pepper, chopped 

1 or 2 carrots, chopped or shredded 

Salt and pepper to taste

1 to 2 Tbsps of dried basil

1 to 2 Tbsps of dried oregano 

2 Tablespoons of tomato paste

1 28oz can of crushed tomatoes 

I 32oz of vegetable broth 

2 large chunks of Parmesan cheese

It is even better if you add more!! 

(If you cut smaller, it will melt better)

1/2 a box of lasagna, noodles broken into pieces 

2 cups of spinach

 

Instructions:

1. Sauté garlic and onion for 2 minutes in 1 or 2 Tbsps of olive oil

2. Add red and green pepper and carrots sauté for 10 minutes 

3. Add tomato paste, crushed tomatoes, basil, oregano, salt and pepper, vegetable broth, Parmesan cheese, lasagna noodles 

4. Bring to a boil then simmer for 10 minutes or until noodles are al dente

5. Add spinach and let wilt for 1 or 2 minutes

 

Serve with Parmesan cheese grated on top

 

We eat this recipe a lot in the winter because it is the perfect comfort food!😊
