Vegetarian Green Pea Soup

This flavorful vegetarian green pea soup recipe with its smooth texture and slightly sweet and seasoned taste is a perfect meal on a cool night.

Recipe

5 to 6 shallots, finely chopped

6 cups of shelled fresh or thawed frozen peas

4 cups of water

6 Tbsps of heavy cream

salt and pepper to taste

1/2 to 1 tsp of white pepper

1/2 to 1 tsp of ground sage

Ingredients:

1. Melt the butter in a heavy saucepan 

2. Add the peas and water and season with salt and pepper

3. Cover and simmer for about 12 to 18 minutes

4. When the peas are tender, ladle them into a food processor or blender with a little of the cooking liquid and process until smooth

5. Return the soup to the saucepan and reheat

6. Stir in the cream

7. Add sage and white pepper

8. Garnish with croutons and Parmesan cheese

Optional:

Strain the soup into the saucepan

This soup takes its name from a suburb of Paris where peas used to be cultivated in market gardens. If fresh peas are ot available, use frozen peas, but thaw and rinse them first.
